墨西哥的「亡靈節」(Día de los Muertos)以其繽紛鮮明的色彩與深厚的文化底蘊,總是令人深深著迷。因此,我們再次把「墨西哥亡靈節」創意教育工作坊帶回清泉。這項特別的活動最早於十年前舉辦,透過動手製作文化特色料理與手作創作,帶領孩子們從體驗中學習這個獨特且充滿生命力的節日。

秋日的週末,清泉帶著細雨的天氣並未絲毫減低孩子們的熱情。孩子們從課程中認識墨西哥民族如何以歡慶的方式慶祝生命的終了,同時分享自己家庭如何紀念已逝的親人,並從中發現文化間緬懷親人習俗的相似之處。 在課程的素描部分裡,孩子們首先學習亡靈節中常見的色彩與象徵意涵,接著動手裝飾他們的陶盆與水泥花盆(大部分由善心人士捐贈)。

花盆靜置晾乾的同時,大家一同進入最期待的午餐準備時光——第一道料理就是親手製作酪梨醬(guacamole)! 還記得十年前我們首次在清泉製作酪梨醬,當時孩子們被問到「酪梨是什麼顏色?」時,興奮地喊出了彩虹裡的每一種顏色。而這次,孩子們的答案從黃色、綠色、棕色,甚至紫色都有,充分展現了他們隨年齡增長的觀察力與細膩感受。

親手調製酪梨醬、嘗試檸檬汁與鹽的比例,不僅讓孩子們更了解味覺的變化,也讓他們更勇於在墨西哥捲餅(burritos)中嘗試新口味。讓孩子親身參與每個步驟,是學習過程中不可或缺的一部分,也是嚮光一直以來最引以為傲的特色。

午餐時間,我們享用了一頓美味的純植料理,以墨西哥捲餅為主食,配料包括米飯、Omnipork 植物肉、再炒豆泥、新鮮生菜、玉米、番茄、莎莎醬,以及他們親手製作的酪梨醬;另外還有豐盛的玉米片碗與我們的招牌椰奶季節水果沙拉。值得一提的是,雖然墨西哥捲餅是當地的經典主食,但這次的搭配更接近「加州風格」,融合了創意與健康飲食的精神。

對許多孩子而言,這是他們第一次品嚐墨西哥捲餅,而結果相當成功!飽餐過後,課程進入下一階段——學習如何照顧花卉,並親手種植。

「嚮食文化探索」是一激發五感的美味系列課程,藉由製作純植料理,來體驗遨遊世界的樂趣;嚮光設計此課程讓每個人都有機會去旅行,認識異國文化與食物起源;透過享受美食和親手製作的體驗,創造人與人之間的情感連結,促進社區交流。

We love the vivid colors and rich history in Mexico’s Day of the Dead so we brought back one of our creative education workshops to Chingchuan. This is a special one we first hosted a decade ago,learning about unique holiday through hands on craft and cuisine inspired from the culture.

It’s the beginning of fall with some drizzle in ChingChuan but it did not stop the kids from joining the class and kicking off the lesson learning about this annual celebration of life holiday. Kids were able to relate and share the similarities within their own family traditions on how they honored loved ones that have passed away. After sketching and getting a better understanding of the colors and symbols, kids set out to decorate their terracotta and cement flower pots, many of which that were donated. While the pots dried, we began to prepare for lunch together, first by making guacamole!

Guessing the color of the avocado has ranged from not just yellow, green, tinges of brown, but also purple! This has been such a huge change since we’ve last made guacamole with the kids here – back then they were unable to guess the color and just yelled out everything in the rainbow. 

Prepping their guacamole and tasting if the lemon juice and salt was enough was a great experience for the kids who would then be more open to testing this out in their burritos. Getting kids involved in the steps is essential in the learning process and something that Bright Side Projects is proud of in our workshops.

We all enjoyed a delicious plant-based meal with burritos as the main course, choice of rice, Omnipork minced meat, refried beans, fresh lettuce, corn, tomatoes, salsa, and their own guacamole as add in options, a generously topped nacho bowl, and our signature seasonal fruit salad with coconut milk. Note that burritos are a common staple in Mexico but with the added ingredients we have prepared, it’s closer to a California styled meal. 

For many it was their first time trying a burrito and we have to say it was very successful and we were able to head into the next section of the workshop, learning how to care for flowers and then planting them. We love being able to share experiences and have these moments with the children and hope you can all continue to support us on our journey together.

The Culture through Cuisine is a delicious series of classes engaging the five senses that allows everyone to experience and “travel” through different corners of the world by creating plant-based cuisines.
