With our Japanese friend Makoto visiting Taiwan, we wanted to take this chance for our older persons to experience sushi making and participating in the super fun nagashi somen (flowing noodles)! Being able to learn a bit of culture along with some hand eye coordination with the games and sushi rolling, we also incorporated plating to allow for more artistic expression.
After searching high and low and finally all the way to Taoyuan for the bamboo structure for the noodles, we put together one of our delicious classic summertime workshops. Plant-based ingredients were all prepped the night before and the morning of due to the time we were limited to and included carrots, cucumbers, air fried sweet potato strips, kimchi, vegan pork floss, tofu skin, and more.
We had heard that in a previous sushi class, the sushi rolls turned into rice balls as everyone stuffed everything they could into it so we were very careful in our design to ensure that this time they would obtain a different experience and also have a brand new creation. Our older friends were extremely willing to learn and their eyes widened as they sliced their sushi rolls and saw how wonderfully each piece turned out.

Gorgeous leaves and flowers were available to enhance the plating and we are so glad we made the early morning trip to the Neihu flower market for these! After the sushi was plated, we headed outside for a light competitive nagashi somen by splitting into teams and seeing how much noodles, cherry tomatoes, and grapes they could grab with their chopsticks. Although some got creative by using their own hands, there was plenty of laughter from everyone and we called the competition a tie from all groups – having fun is the most important!
Thank you Makoto for bringing back Japanese sweets for our older friends that they shared to end a great day, we look forward to seeing our older friends again soon!
